To whip up a batch of these tasty bites, gather the following ingredients:
- Sourdough Starter: Make sure it’s bubbly and has been recently fed (discard works, also. See recipe note). Don’t have a sourdough starter? Order one here!
- Eggs: The base of your bites; they provide protein and richness.
- Milk: Adds creaminess to the mixture. Feel free to use a non-dairy milk, if needed.
- Fresh Vegetables: Think bell peppers, spinach, mushrooms, or whatever you have on hand.

- Cheese and/or meat (optional): A sprinkle of cheddar or feta can add a delightful creaminess. Want more protein? Add cottage cheese or your favorite breakfast meat.

Sourdough Egg Bites
Ingredients
- 1 cup active sourdough starter*
- 6 eggs
- 1/4 cup milk (dairy or non-dairy)
- 2 cups chopped vegetables (bell pepper, spinach, mushrooms, zucchini, onions, etc.
- 1 tsp dried basil
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp sea salt
- 1/2 cup cheese or cooked meat
Instructions
- In a medium bowl, combine the starter, eggs and milk, and whisk until well combined.
- Add the chopped vegetables, meat (if using), spices and salt.
- Fill an oiled or lined 12 cup muffin tin with the mixture, dividing it evenly in the cups. Top with cheese, if using.
- Bake at 350° for 30-35 minutes, until golden brown.
- Let cool for 5-10 minutes before serving.
