A Unique Twist on a Popular Favorite

If you’re looking for a quick, nutritious breakfast that’s packed with flavor and protein, look no further than sourdough egg bites! These are just like the wildly popular Starbucks Egg Bites, but better. These delightful little morsels combine the tangy goodness of sourdough starter with the protein-packed power of eggs and your favorite vegetables. Let’s dive into why these bites are not only delicious but also a healthy way to start your day. The combination of protein and the fiber from the vegetables make it the perfect healthy breakfast.

Why Sourdough in Egg Bites?

Sourdough bread is known for its unique flavor profile and health benefits. By incorporating sourdough starter into your egg bites, you add a depth of flavor that elevates this simple dish. It also helps elevate this from being just egg-y in texture and flavor, to having a slightly muffin texture. Plus, it’s an excellent way to use up any excess starter you might have on hand! No need to stop for Starbucks Egg Bites when you have these!

Ingredients

Ingredients You’ll Need

To whip up a batch of these tasty bites, gather the following ingredients:

  • Sourdough Starter: Make sure it’s bubbly and has been recently fed (discard works, also. See recipe note). Don’t have a sourdough starter? Order one here!
  • Eggs: The base of your bites; they provide protein and richness.
  • Milk: Adds creaminess to the mixture. Feel free to use a non-dairy milk, if needed.
  • Fresh Vegetables: Think bell peppers, spinach, mushrooms, or whatever you have on hand.
  • Spices & Seasonings: Salt, pepper, and herbs help enhance the flavor of the egg bites. I love using Redmond Real Salt, their garlic and onion salts, and their organic season salt. Use code Laura15 for a discount on all of those!
  • Cheese and/or meat (optional): A sprinkle of cheddar or feta can add a delightful creaminess. Want more protein? Add cottage cheese or your favorite breakfast meat.
  • Muffin tin liners: I like these unbleached liners.
