Single Serving Protein Pancake

These single serving protein pancakes are delicious, filling and easy to make! They are also gluten free and dairy free.
Servings 1 person

Ingredients

  • 1/4 cup cooked sweet potato
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 scoop protein powder
  • 1/8 cup milk
  • dash salt

Instructions

  • Mix all ingredients together in a bowl. Cook over medium-low heat and enjoy!

Notes

Butternut squash also works well. Mashed banana may work but I have not tried that variation.
